Hi All! Kris from Young Married Chic here doing a guest post for the lovely Caroline while she is vacationing away in the Greek Isles (lucky, lucky girl). I thought I would share one of my favorite Greek Themed salads with you so we can have a little bit of Greece at home.
Summertime brings along many of my favorite fruits and veggies to use in meals- but nothing says late summer to me more than watermelon. I love to serve this watermelon feta salad alongside any dish, and it’s light flavors and easy to assemble ingredients will have you outside enjoying the summer sunshine as much as possible before Fall comes!
Watermelon Feta Salad
Ingredients:
One Medium sized watermelon, balled or cut into chunks
1 cup of crumbled feta cheese, more if you wish
4 tablespoons of chopped mint leaves
Juice of one lime
Preparation:
1. Put watermelon chunks in a large bowl
2. Sprinkle crumbled feta cheese over top of the watermelon
3. Sprinkle chopped mint leaves over the feta
4. Pour lime juice over the salad just before serving
