Summertime is here, the kids are out of school, and we are all craving slow and easy dinners. Nothing sounds more simple than firing up the grill for steaks, hamburgers and tasty grilled chicken. But summer grilling doesn’t just mean your main courses. You can actually cook all of your dishes on the grill.

While you have the grill already fired up for the main course, you can really impress your guests by also roasting up side dishes and even desserts! What is also fantastic about this method of cooking is that the grill adds so much flavor without adding any unhealthy ingredients (like butter). Plus, since you are already using the grill, clean up couldn’t be any easier. Read on below for our favorite summertime grilling recipes that the whole family will love!

Summer Succotash 

Let’s start with a super simple, delicious, colorful and seasonally fresh side dish that takes no time at all!

Ingredients:

2 zucchini

2 squash

1 white onion

4 corn on the cob

Olive oil

Salt/pepper

Directions

Slice zucchini and squash length wise into half inch thick slices. Cut onion in half. Brush both sides with oil, salt, and pepper. Grill until there are grill marks and veggies are tender. Take off grill and allow to cool. Once cool, dice everything into bite size pieces and mix in a large bowl. Voila! 

Grilled Fruit Dessert

When it’s hot outside, no one wants a super heavy dessert. Keep things light with grilled fruit and a scoop of delicious ice cream or yogurt. It’s a crowd pleaser and keeps the evening lively without people going into a food coma!

Ingredients:

Half a watermelon

2 pears

2 peaches

1 mango

Ice cream or yogurt

Directions

Slice watermelon into triangles. Slice pears and peaches in half. Slice mango length wise into half inch thick slices. Grill until there are grill marks and fruit is tender. Top off the colorful fruits with a scoop of your favorite ice cream or yogurt. Coconut whipped cream or a cashew yogurt are great dairy substitutes. You can even enjoy the grilled fruit as a healthy breakfast!
